A food ingredient is any component added to food to produce a particular result. Food additives, compounds added to foods for specific technical and functional goals during processing, storage, or packaging, are included in the “food ingredient.”

Food additives are classified into two types: direct and indirect. Natural food additives are substances added to foods to improve their technical or functional properties. Stabilizers, for example, are used to help avoid nutrient separation in fortified milk products, whereas phosphates are employed as a leavening ingredient in baked foods. Indirect additives are not added to food on purpose but may be present in microscopic levels due to processing, packing, transportation, or storage.
